syrup cookies
(makes 24)
You will need:
350g plain flour
100g self raising flour
125g granulated sugar
125g salted & diced butter
125g golden syrup
1 large lightly beaten egg
- set oven to 240 degrees.
- Sift both of the flours and the sugar together, mix well.
- add the butter using your finger tips rub together the ingredients until the look like fine bread crumbs.
- When all the butter is completely mixed in, make a well (dip) in the center and add the egg and the syrup in to the mix.
- Mix well, drawing in any of the flour left at the sides of the bowl and STOP as soon as it has been formed in to a ball, NO DOUGH LIKES TO BE TOUCHED TO MUCH IT DRAWS MOISTER OUT OF THE DOUGH!!!!
- Place dough onto your CLEAN work area. Divide in to two even pieces and squash the dough into evenly sized discs. Cover and chill or roll out immediately.
- Use cookie cutters to shape.
- finally, place the cookies on to a greased baking tray and stick into the oven for 15-20 minutes.
